Superfood menu launch

I love food and I enjoy creating wonderful dishes for our clients and their guests to eat. Sourcing quality ingredients from responsible suppliers has always been important for us as a company and I am proud of our credentials in this field. However, like many of us who listen to the news I am increasingly concerned by the impact of the food we are eating on our health and wellbeing. For this reason I have been leading our development team in a review of our current ingredients. I wanted to discover if we could offer the same wonderful flavours and textures with new ingredients which deliver better nutritional value.

I thought it would be wonderful to design canapés and plates of food which people enjoy eating, which taste great and which people can feel good about eating. Our clients are entitled to consume food which looks after them holistically; I wanted to see if we could create genuinely guilt-free party food.

Superfoods have been in the news for several years now and the more I looked into the nutritional benefits of these foods, the more obvious it seemed that we should integrate them into our dishes. With ingredients like Quinoa, Chia seeds, Maca and Blueberries we could refresh our menus with contemporary flavours which also provide wonderful health-giving properties.

Years of research have demonstrated superfoods can help fight disease, help maintain weight and live longer. Tiny seeds like Chia are packed with protein, iron, zinc and magnesium, the supergrain Quinoa contains all nine essential amino acids and Blueberries boost brain power and the body’s immune system. Turmeric is loaded with antioxidant, antiviral and anti-inflammatory properties while the Maca root is full of key mineral and increases energy levels. I am always looking for a new personal challenge and incorporating these foods into our new menus has been fun and exhilarating. 

We’ve called these new Superfood-packed dishes our “Feel-Good Menu” and we are launching the canapés at Strictly SW7 at the V&A in March – I’m looking forward to gauging the reaction. Our Feel-Good Dinner menus are still in development and we plan to launch these in the Spring. Of course many Superfoods are already on our menus – Salmon, Samphire and Goji berries feature in some of our most popular dishes – but we have plenty more surprises up our sleeves.

Feel-Good Superfood Canapé Selection

  • Caramelised scallops encrusted in Chia seeds served with Samphire and Ginger sauce
  • Acai crusted duck breast on wild rice cake with a Wild Blueberry Compote
  • Moringa Biscuits baked golden topped with creamed goat’s cheese and Goji berry Jam
  • Coriander, Fennel and pepper crusted tuna wrapped in Nori with a wasabi cream
  • Quinoa blinis with Mackerel, horseradish cream & Pickled Beetroot
  • Nut encrusted chicken with a Maca Thai dip
  • Tumeric marinaded lamb with a Spiced Lentil Dip
  • Carrot cake with handpicked crab and Avocado
